Yellow 5 (Tartrazine)
Definition
A synthetic lemon-yellow azo dye derived from petroleum. One of the most commonly used artificial food colorings worldwide.
Why It Matters
The 2007 Southampton Study (published in The Lancet) directly linked Yellow 5 consumption to increased hyperactivity in children aged 3-9. In the EU, any product containing Yellow 5 must carry the warning: 'May have an adverse effect on activity and attention in children.' It is also associated with allergic reactions, particularly in aspirin-sensitive individuals.
