Definition

A synthetic triarylmethane dye derived from petroleum that produces a bright blue color. Used in beverages, candies, and baked goods.

Why It Matters

Blue 1 has been shown to cross the blood-brain barrier in animal studies, raising concerns about potential neurological effects. A study published in the Annals of Internal Medicine linked Blue 1 to toxicity when administered to critically ill patients through enteral feeding. It is also associated with chromosomal damage in in-vitro studies.
