Sodium Benzoate (E211)
Definition
A synthetic preservative used to inhibit mold, yeast, and bacterial growth in acidic foods and beverages. It is the sodium salt of benzoic acid.
Why It Matters
When sodium benzoate is combined with ascorbic acid (vitamin C) — which is common in soft drinks and fruit juices — it can form benzene, a known human carcinogen. The FDA has found benzene levels above the safe drinking water limit in some beverages. Additionally, a 2007 University of Southampton study linked sodium benzoate to increased hyperactivity in children.
