Polysorbate 80 (E433)
Definition
A synthetic emulsifier derived from sorbitol, oleic acid, and ethylene oxide. Used to keep ingredients blended and improve texture in processed foods, pharmaceuticals, and cosmetics.
Why It Matters
A landmark 2015 study in Nature found that emulsifiers including Polysorbate 80 disrupt the intestinal mucus layer, alter gut microbiota composition, and promote low-grade intestinal inflammation in mice — conditions associated with metabolic syndrome, obesity, and inflammatory bowel disease. It is under increasing scientific scrutiny as a driver of gut permeability ('leaky gut').
