Maltodextrin
Definition
A highly processed white powder made from corn, rice, potato, or wheat starch. Despite being classified as a complex carbohydrate, it is broken down so aggressively during processing that its glycemic index (GI 85-105) often exceeds that of table sugar (GI 65).
Why It Matters
Maltodextrin spikes blood sugar faster than table sugar, making it particularly problematic for people with diabetes or insulin resistance. Research in PLOS ONE (2015) suggests it alters gut bacteria composition, suppressing beneficial Lactobacillus strains while promoting the growth of E. coli, potentially increasing susceptibility to intestinal inflammation.
