Carrageenan (E407)

Also known as: E407Irish Moss Extract

Definition

A thickener and stabilizer extracted from red seaweed, used to improve texture and prevent separation in dairy and plant-based products.

Why It Matters

While food-grade (undegraded) carrageenan is classified as safe by the FDA, research published in Environmental Health Perspectives shows it can trigger intestinal inflammation and may exacerbate inflammatory bowel conditions. Degraded carrageenan (poligeenan) is a recognized carcinogen. The Cornucopia Institute has petitioned for its removal from organic food standards.
