The Gut Barrier Breakdown
A landmark study published in Nature demonstrated that two very common synthetic emulsifiers — Polysorbate 80 (P80) and Carboxymethylcellulose (CMC) — directly erode the protective mucus barrier lining the intestinal wall. In a healthy gut, this thick mucus layer prevents bacteria from contacting the intestinal cells. When emulsifiers dissolve this barrier (much like dish soap cuts through grease), bacteria penetrate the intestinal wall, triggering chronic low-grade inflammation.
Leaky Gut and Metabolic Syndrome
This persistent intestinal inflammation can lead to a condition known as "leaky gut" (increased intestinal permeability), where bacterial toxins leak into the bloodstream. In animal models, regular exposure to emulsifiers led to colitis, metabolic syndrome, obesity, and insulin resistance by disrupting gut microbe populations.
