Sucralose (E955)
Definition
A synthetic, zero-calorie sweetener created by chlorinating sucrose (replacing three hydroxyl groups with chlorine atoms). Approximately 600 times sweeter than sugar.
Why It Matters
A 2023 study published in the Journal of Toxicology and Environmental Health found that sucralose-6-acetate — a metabolite formed when the body processes sucralose — is genotoxic (damages DNA). The study also showed that sucralose damages the gut lining ('leaky gut'), triggers oxidative stress, and increases expression of genes linked to inflammation and cancer.
