How Do Heavy Metals Get Into Chocolate?

Lead and cadmium enter the cacao bean in two completely different ways:

  • Cadmium (Soil Absorption): Cacao trees absorb cadmium directly from contaminated soil as they grow, depositing it inside the cacao bean itself. Volcanic soils and fertilizer runoff are primary contributors.
  • Lead (Post-Harvest Processing): Lead typically gets onto the beans after harvest. As cacao beans dry in the sun on roadside farms, dust containing lead from industrial fumes settles on the sticky beans.

Even small amounts of heavy metals can accumulate in the body over time. Lead is a powerful neurotoxin that affects cognitive development in children and raises blood pressure in adults. Cadmium is toxic to the kidneys and is classified as a human carcinogen.

How to Choose Safe Chocolate

You don't need to give up chocolate entirely. Opt for brands that transparently test and source beans from regions with lower soil metal concentrations (e.g. West Africa typically has lower cadmium than South America). Look for products with third-party purity certifications.
